It’s not like I was a total sedentary sloth after giving birth to baby Kaden. I made sure to move around a little here and there. But giving birth is not only a miracle, it’s exhausting! But going two months without engaging in my favorite physical activities was starting to drive me crazy. Being super active and then having to stop for weeks is like telling a tiger to ditch its stripes.

Maybe you were hoping I’d reveal a few tricks. But completely getting rid of the pregnancy pounds is not magic. It’s actually very simple. It always comes down to diet. Pure and simple.

How Long Should It Take To Lose Pregnancy Weight?

Is it okay to take your time losing pregnancy weight? Nobody would blame you if you did. But you might not want to take too much time. That’s because according to a 2019 study published in the journal Nutrition, postpartum weight retention is both a short- and long-term risk factor for being overweight and obese. The researchers write, “Postpartum obesity has remained a clinical and public health challenge. The greater gestational weight gain is a strong predictor of higher postpartum weight retention.” In other words, the more weight you put on during pregnancy, the more weight you’ll have to lose after you give birth. 

Again, it’s not rocket science. 

But it’s not just how much you weigh after you give birth that’s at stake. It’s also your overall health. “The physiological and biological changes coupled with high-calorie intake and restricted physical activity may further augment the risk of higher postpartum weight retention, weight gain and related metabolic comorbidities later in life,” suggests a research study in an Indian OBGYN journal

So what’s a decent goal for losing pregnancy weight? That same journal suggests that postpartum women with normal body weight but substantial postpartum weight retention — at least 10 pounds — as compared to pre-pregnancy body weight “should be motivated to attain pre-pregnancy body weight over a period of 12 months after delivery.”

How Quickly Should You Resume Exercise After Giving Birth?

That study from India I mentioned? It says that postpartum women with uncomplicated delivery should be encouraged to gradually resume physical activity within four to six weeks post-delivery or as soon as they feel comfortable. 

Women with cesarean or complicated deliveries should gradually resume physical activity after their first postpartum check-up (i.e. six to eight weeks post-delivery). 

No matter what, postpartum women “must be encouraged to engage in low impact exercises such as walking and gradually include core muscle group strengthening exercises,” the researchers suggest. 

Shoot for building up to 5 days a week of 30 minutes of moderate-intensity exercise, including some muscle-strengthening activity. 

Eat This, Not That For Post Partum Weight Loss

What I Ate to Lose 55 Pounds After Having a Baby

Hello, fellow new Moms and friends!  I'm here to share my experience with losing 55 pounds after having my baby, a journey with some dietary surprises and a lot of learning. Trust me, it's not your typical weight loss story!

Let's dive into the world of postpartum diets. Like many, I assumed that eating lots of salads and raw foods was the way to go. However, I quickly learned that postpartum nutrition requires a different approach.

Instead of my usual diet, I shifted to eating more warming foods. This included soups, bone broths, meat with bone, raw milk, and raw cheese. It was a significant change from my previous eating habits, but it was one that I found to be beneficial.

During this time, I also delved into learning about the “fourth trimester.” This concept emphasizes the importance of healing your body postpartum through rest and proper nutrition. It was enlightening to understand how crucial this period is for new mothers. By listening to my body and adapting my diet, I was able to lose 55 pounds in less than four months.

Breastfeeding exclusively also played a role in my weight loss journey. Not only did it help me shed pounds, but it also supported my baby's nutrition. I learned that eating right and taking care of your body can positively impact your milk supply.

While I reduced my intake of salads and raw veggies, I didn't eliminate greens from my diet altogether. I continued to enjoy my daily green drink, which provided me with essential nutrients and kept my energy levels up throughout the day. This was a great way to maintain a balanced diet without relying too heavily on raw vegetables.

While you’re probably thinking that this isn’t the same diet I’ve recommended for cleansing. And that is correct.

Cleansing is a different journey than all together just losing weight. Cleansing can help you lose weight and detox your body so your gut is more able to digest certain foods and allow the rest of your body to function more properly.

Cleansing is great once in a while but it’s best to have the Green drink daily and continue on a whole food diet post cleansing.

I still recommend easing into and out of the cleansing process with my precleanse list approved foods but for moving forward in your day, an organic whole food diet is always the best thing for your body, gut and weightloss.

Raw milk is often said to be high in essential nutrients like vitamins (A, B, D), minerals (calcium, magnesium, phosphorus), enzymes, and beneficial fats. Some say that raw milk has probiotics that are good for gut health.

Raw milk may be easier to digest compared to pasteurized milk, possibly due to the presence of lactase-producing bacteria, which may help lactose-intolerant individuals.Some studies suggest that drinking raw milk during childhood could be associated with a lower risk of developing allergies and asthma. However, these studies do not prove the claims as further testing is needed.

I like to make a big batch of these for the week so when I’m hungry after breastfeeding and playing pickleball I have a super nutritious meal To eat.

Lunch: Tomato-less Chili

While I generally do not use a lot of nightshade vegetables, I do think fresh or dried jalapeño peppers in small quantities add a kick to dishes and have detoxifying powers. For more protein, swap the cannellini beans with 1 pound of cooked ground turkey, if desired.

Dinner: Chicken teriyaki, brown rice and broccoli (Can also use salmon or ground turkey.)

  • 1 lb organic chicken 
  • Salt pepper to taste
  • 1 tbsp avocado oil
  • 1 lb organic broccoli chopped and steamed in water with dash of salt.

Ingredients

Makes 6-8 tacos

    • 12 eggs
    • 1 pack siete cassava flour tortillas 
    • 1 tbsp avocado oil
    • 1/4 cup raw cheddar cheese
    • 1 pack organic bacon – no sugar added
    • Optional salsa, hot sauce and avocado

Directions

Cool the bacon on a parchment lined baking sheet. This is the absolute best way to cook bacon. It cooks completely even without ever having to turn it.
 
One trick I use is having the bacon room temperature before I add it to the sheet pan. Cook 15-20 minutes at 400 degrees Fahrenheit. Remove from oven and transfer cooked pieces on a plate lined with paper towel to soak up the excess oil. This will allow the bacon to cool and crisp.
 
Meanwhile cook the eggs. I use 1 tbsp avocado oil and then add the scrambled eggs to the pan to cook. Stirring continuously, add the raw cheese when the eggs are about 3/4 way done. Remove from heat. 
 
Heat the Siete tortilla on the stove in a small sauté pan. Just place the tortilla on the pan with no oil or anything. Warm each side for 30 seconds. Top with egg mix and crumble one piece of bacon on top. Optional to top with salsa and avocado  or hot sauce. 
 
Arrange and assemble the tacos in glass food storage for later use. I reheat one at a time in the microwave for one minute with a cover to help lock in the moisture. These keep all week. Enjoy!

Despite What TikTok Says Is Berberine Really “Nature’s Ozempic” For Weight Loss?

Thanks to a huge TikTok trend, berberine is now promoted as “nature’s Ozempic.” What the heck is berberine and does it really help you lose lots of weight by suppressing appetite the same way Ozempic does? Certified nutritional therapist and ChefV.com founder Veronica Wheat weighs in (no pun intended).

With an infant to care for (no hubby Brandon, I’m not talking about you haha) and a green veggie juice delivery business to run, I don’t have the time—or, the interest—to watch TikTok videos. But after hearing about the berberine trend for weight loss, I couldn’t resist plunging down the rabbit hole. 

Here’s just how one of the berberine TikTok videos—which cumulatively have been viewed 100 million times—begins:

“I started taking berberine yesterday and I’m not kidding you, I was stuffed all day.”

Because of testimonials like this, be they fake or real, the fact is that from January to mid-July of 2023, sales of berberine-containing products exploded by nearly 90%. [SOURCE

Why Are TikTok Influencers Taking Berberine For Weight Loss?

So what’s behind the berberine TikTok trend? Well, in case you haven’t heard about Ozempic, it’s a drug that was approved by the FDA in 2017 only for adults with type 2 diabetes. 

Ozempic lowers blood sugar levels by helping the pancreas make more insulin. Besides effectively lowering blood sugar levels, Ozempic users also noticed that their appetites plummeted while on the drug, leading to quick, significant weight loss. 

That explains why celebrities and thousands of “regular people” who could afford the steep cost of purchasing Ozempic off-label (in other words, not for type 2 diabetes) began hoarding Ozempic, creating a shortage of the drug for people living with diabetes. 

The shortage of Ozempic (generic name: semaglutide), its high cost, and lawsuits over its side effects—in some patients, it causes gastroparesis, a severely painful disorder that causes food to move at a snail’s pace through the stomach to the small intestine—has caused people to look for a natural alternative. 

Enter berberine.

What is Berberine?

Like flavonoids, carotenoids, and allicins, berberine is a chemical found in plants, or in other words, a phytochemical. Phytochemicals are natural compounds that plants use to protect themselves from being devoured by insects. Natural plant chemicals can either be toxic to humans or they can have medicinal-like effects. But does berberine really work like Ozempic for weight loss? I’ll get to that in a sec. 

First, though, it’s important to know where berberine comes from. When it’s extracted naturally, it comes from the roots or bark of the following plants: 

  • Goldenseal
  • European Barberry
  • Oregon grape
  • Phellodendron
  • Tree turmeric

Most of the berberine supplements that TikTokers use for weight loss probably claim to be extracted naturally. However, I’m not sure that’s true. As this study in Nature points out, researchers have figured out how to make berberine from genetically-modified yeast. (Yuck!) And I bet you that using this GMO yeast will prove more cost-effective than having to import the natural sources of berberine. Anyway, that’s food for thought; if you want to try a berberine supplement, do your research and make sure it’s GMO-free. (But wait until the end of the article to make your decision about whether to purchase a berberine supplement!)

What Are The Benefits Of Berberine? 

Berberine has been a compound in many herbs that have been used for thousands of years in traditional Chinese and Ayurvedic medicine. According to a research article in Chinese Medicine, berberine was first discovered in 1830 and since then it’s been the most studied alkaloid compound. In the early 1960s, Indian researchers demonstrated that berberine helped prevent diarrhea during cholera outbreaks. 

Even today, herbs with berberine are kept in medicine cabinets in Chinese homes like Immodium or Pepto Bismol to treat diarrhea. 

Having a serious case of the runs is one way to lose weight. But besides diarrhea treatment, what are the other benefits of berberine? And does research support it for weight loss? 

Well, according to the Nature study above: 

“Berberine has been found with pharmaceutical potential to treat obesity, regulate gut microbiota, treat atherosclerosis, or ameliorate Parkinson’s disease. There have been over 80 clinical trials worldwide to investigate berberine’s medicinal uses in these diseases.” 

OK, so wow, 80 studies, that’s impressive. But notice the quote above says “investigate.” In other words, is berberine legit for weight loss or has it been shown to be a dud in research studies? 

What Does The Research Say About Berberine?

The problem with berberine is that it’s really difficult to obtain it from food naturally. It’s pretty much found in just those handful of plants above. So does research support taking a supplement with berberine? Personally, I’m always in favor of using real food instead of supplements whenever possible. However, it  does seem that berberine is at least minimally effective for managing metabolic disorders by lowering: 

  • Triglycerides

    →  Triglycerides are a type of fat in your blood. Did you know that Chef V’s 21 DAY DETOX and GREEN DRINK PLAN lowered triglycerides by an average of 23% in a clinical trial? (Learn more.)

  • Cholesterol

    Cholesterol is a necessary nutrient. But too much of it can accumulate in the arteries as plaque. The clinical trial on Chef V products reduced participants’ total cholesterol by an average of 9.2%; LDL cholesterol (the so-called “bad” cholesterol) by 10.7%, and cholesterol to LDL ratio by 7.7% (Read more about the study here.)
  • Blood Sugar

    The HbA1C test (A1C for short) provides a snapshot of blood sugar levels over the last 3 months. The clinical trial showed Chef V products lowered A1C levels by an average of 1.7%, which is huge for someone managing blood sugar levels. (Details here.)

In addition to these benefits of berberine, research also supports it for cardiovascular health. It also has been shown to improve the gut barrier, making sure no nasty pathogens get in, proving that it may work to help combat diarrhea.

Is Berberine Safe To Take? 

If something sounds too good to be true, it usually is. In the case of berberine, taking it for weight loss could potentially backfire—if you’re taking diabetes drugs—like Ozempic or Metformin—and blood pressure medications. Berberine could potentially cause blood sugar levels to fall too low in some people or counteract the effects of blood pressure medications. So make sure you talk to your doctor before you start using berberine supplements. 

Is Berberine Like Ozempic?

So let’s get to the heart of the matter, or more accurately, the stomach of the matter. Does berberine work for weight loss? And if so, does it work in the same way as Ozempic? 

Let’s answer the first question. If you Google “berberine weight loss pubmed” you can quickly see that the results are a mixed-bag. A meta-analysis (a review of several studies) said there was a “significant reduction of body weight and body mass index (BMI)”. Another study also showed good results but it was on rats. Another study showed “mild weight loss” in people with obesity while another study on its effects on obesity “yielded no significant decline in body weight.” 

But if a whole nation of TikTokers swear by it, shouldn’t that anecdotal evidence count for something? 

I can’t answer that question for you. You’ll have to decide for yourself. There are worse things you can do for your health than taking a berberine supplement. But I’m not convinced that it’s necessary. And more to the point, to answer the second question, berberine is not “Nature’s Ozempic.”

Why Berberine Is Not Like Ozempic

Remember the name semaglutide? That’s the generic name for Ozempic and the more recent drug approved for weight loss, Wegovy, which was created by the same manufacturer of Ozempic in 2021, the first time a weight loss drug was approved by the FDA since 2014. (Weight loss drugs have a bad track record of side effects.)

Semaglutide works by mimicking the role of a natural hormone, called GLP-1 (glucagon-like peptide-1). Here’s why that’s important. GLP-1 tells your body you have eaten. So semaglutide works by tricking your brain into thinking you’ve already eaten. 

Berberine does not work this way whatsoever. So no, berberine is not a surrogate for Ozempic. Yes, berberine’s effects on metabolic disorders is promising as a 2022 study in Molecules describes. 

And yes, these effects do include lowering blood sugar and improving insulin sensitivity, meaning your pancreas needs to pump out less insulin to manage blood sugar levels. It could be that berberine leads to weight loss because of its effects on controlling insulin and other hormones that control the size of your fat cells. 

But that doesn’t mean it works the same way Ozempic does. And to compare berberine to Ozempic is at best false advertising and at worse, potentially dangerous for those who take diabetes medications (see side effects concern above).

Is Berberine Good For Weight Loss? Conclusion

When you eat real nutrient-dense food, the nutrients activate GLP-1. In other words, you don’t need to purchase berberine supplements in order to tell your brain that you are full. As I cautioned in this article I wrote about Ozempic, lots of people who take the drug for weight loss are doing so at the risk of serious malnutrition. 

Here’s how to eat healthy if you take semaglutide/Wegovy for weight loss; you should only take Ozempic if you have type 2 diabetes.

Maybe you’ve heard of “A1C” and know it has something to do with blood sugar levels. That’s a good start. But your A1C levels don’t only reveal whether you have diabetes or prediabetes. Your A1C level also has a profound effect on skin health and the aging process. And considering that your A1C level is one of the most important health biomarkers, let’s dive deeper. 

It's important to understand that lowering your A1C levels is a gradual (slow) process. Unlike a blood glucose test, A1C measures your average blood sugar over a period of 2 to 3 months. This means, it can take up to 3 months to notice significant changes in your A1C.

What is an “A1C” Blood Sugar Test?

Been a while since you’ve had lab work done? If so, I highly recommend that you get a Complete Metabolic Panel (CMP) that includes A1C. Getting a CMP and A1C provides a snapshot of your liver and kidney health, electrolyte balance, metabolism, and blood. 

Just as you take your car to a mechanic for optimal engine performance, you should get these diagnostic tests to ensure your body’s “engine” is running smoothly. 

The hemoglobin A1C or HbA1c test (A1C for short) is a simple blood test that measures your average blood sugar levels over the past 3 months. That’s the simple explanation. 

More specifically, the A1C test measures the amount of glycated hemoglobin in the blood. 

So let’s break down what “glycated hemoglobin” is in two parts. First, hemoglobin is an oxygen-carrying protein in your red blood cells. Hemoglobin carries oxygen from your lungs to the rest of your body. 

What does this have to do with blood sugar? 

That brings us to “glycation.” When you eat anything with sugar or carbohydrates that break down into sugar, some of that sugar sticks to hemoglobin. This is called glycation. The A1C test measures the levels of these sticky, sugary molecules as a percentage. The higher the percentage of red blood cells with sticky hemoglobin, the higher your blood sugar levels.

What is the A1C Test Used For?

Because red blood cells live for about three months, an A1C test provides a sneak peek of how much sugar is hanging out in the bloodstream over that three-month period of time.

The A1C test is used to diagnose diabetes, assess how well people with diabetes manage their blood sugar levels and diagnose prediabetes.  

According to the Diabetes Research Institute, 37.3 million Americans or 11.3% of the population have diabetes, and nearly 100 million Americans have prediabetes, including nearly 50% of people 65 and older.

Why Glycation Matters

Obviously, diabetes is a major health concern. Research from the Journal of Exercise Nutrition & Biochemistry explains that glycation—the underlying mechanism behind type 2 diabetes—leads to “a variety of irreversible dehydration and rearrangement reactions that lead to the formation of advanced glycation end products (AGEs).”

When you eat blackened, barbecued meat or breathe in polluted air, this causes AGEs. AGEs lead to premature aging, including “a loss of protein function and impaired elasticity of tissues such as blood vessels, skin, and tendons … and diabetic complications.”

So can’t you just take some supplements to overcome glycation and AGEs? 

Not so fast, suggests the research. 

“Because there are no enzymes to remove glycated products from the human body, the glycation process matches well with the theory that the accumulation of metabolic waste promotes aging.”

A1C Levels & Skin Health

For some people, including those with diabetes, having high blood sugar levels is an abstract health problem. In other words, the link between having high blood sugar levels and serious health problems isn’t considered before it’s too late. 

For instance, according to the Centers for Disease Control and Prevention (CDC), common diabetes health complications include heart disease, chronic kidney disease, nerve damage, and other problems with feet, oral health, vision, hearing, and mental health.

Although it seems shallow in comparison, let’s face it, people do care about how they look. And another thing that relatively few people give much thought to is how A1C levels affect the skin. Sugar not only sticks to red blood cells, it also sticks to collagen and elastin, the two primary types of structural protein in the skin. 

When there’s too much sugar on collagen and elastin, those advanced glycation end products I mentioned damage collagen and elastin, leading to wrinkles and inflamed, dry, and itchy skin. 

The bad news is that it’s difficult to reverse AGEs-related skin damage. But there’s a simple, research-proven method to manage A1C levels and prevent further harm to the body…

Chef V Green Drink Put To The Test for A1C Levels

Fast forward to early 2023 when Brandon and I decided to put the 7 certified organic green leafy veggies to the test. We invested in a clinical trial conducted by Citrus Labs, a Santa Monica-based independent research organization. Citrus Labs analyzed the effects of a Chef V 21 DAY DETOX followed by a 7-day continuation of a Green Drink Plan

It’s important to mention that none of the study participants had diabetes or high blood sugar levels. Before day 1 of the 28-day study, the average A1C level of the 38 participants was 5.4. On day 28, the participants’ A1C levels were 5.31—a reduction of 1.7%. 

That might not seem like a big reduction. But it is. Just like the difference between a 5.0 and 6.0 earthquake is monumental in terms of power and potential destruction, a reduction of 1.7% in A1C levels is impressive, especially for a population that didn’t have a high blood sugar level to begin with. Going Green For Healthier A1C Levels

One of the simplest ways to lower blood sugar levels is by consuming more green leafy veggies. Several studies prove this. For instance, a study of 417 type-2 diabetic patients 65 years or older in Japan showed that eating 1 cup or more a day of green leafy veggies led to significant decreases in HbA1c, triglycerides (fat in the blood), and waist circumference.

Clinical Trial Results: Participants Lose Avg. 8 POUNDS

Recently, CHEFV.com commissioned Santa Monica-based Citrus Labs to independently analyze the effects of following a 21 DAY STARTER DETOX, followed by a 7-day ORGANIC GREEN DRINK PLAN, for a total of 28 days. 

For the clinical trial, 38 men and women between the ages of 31-65 were recruited. At the beginning of the trial, participants weighed, on average, 176 pounds. By the end of the 28 days, the participants’ average body weight was 168 pounds. Of course, some people lost significantly more than 8 pounds.

(If you check out our SUCCESS STORIES, you’ll see that people who have more weight to lose have lost an impressive amount, in some cases over 50 pounds in just 21 days. And the best part is they have kept the weight off!)

Now, if you don’t think 8 pounds is a lot in 28 days, I want you to consider two things. 

First, none of the study participants had any chronic metabolic disorders such as obesity or type 2 diabetes. In other words, study participants didn’t necessarily have a significant amount of weight to lose. 

And secondly, going from 176 to 168 is a drop of almost 4.5%. Imagine melting away nearly 5% of your body, especially the part you least want to keep.

4 Tools for a Summer Health Boost & Slimdown

The biggest factor that contributes to maintaining a trim weight and overall health is nutrition. In this article I give you four tools for enhancing your diet and boosting your well being. And no coincidence, these same tips will contribute to reducing your triglyceride levels. 

The good news is you don’t have to do high-intensity, American Ninja Warrior-type exercise to have a hot summer bod. All you need is a reboot of your digestive system. Here are my 4 top tips for improving digestion and triglyceride levels and getting lean for summer….

#1: Apple Cider Vinegar

Can your “mother” help you achieve a summer slim down?

And by “mother” I mean the cloudy film that rests on top of a bottle of raw, unfiltered, organic apple cider vinegar (ACV)….

Raw ACV bottles such as those sold by the brand, Bragg (the same company that sells liquid amino acids, a soy sauce alternative) prominently advertise “with the mother” on the product label. As well they should. That’s because the mother is tiny bits and pieces of proteins, enzymes and friendly bacteria.

ACV helps increase stomach acid production. And because of the friendly bacteria it contains, it also acts like a probiotic.

Honestly, I tried to find some research on humans that shows ACV can help with weight loss. I hit a brick wall, but I did find some research on animals (rats and mice) that support using it for the following: reducing fat storage; lowering blood sugar; improves metabolism and suppressing appetite.

The only downside to ACV is it tastes really harsh. But you can add it to a Green Drink to mask the taste.

ACV is also good for skin. In fact, many people use ACV to treat skin conditions. Drinking a little bit every day can help clear your skin from the inside-out. And because of its beneficial bacteria and enzymes, it can help cleanse your body.

#2: Bone Broth/Collagen Powder

Pretty soon, it’ll be too hot to sip bone broth.

But collagen protein powders have become very popular. And you can easily add a scoop of it in your blender with almond milk and my Organic Protein Shake if you’re doing a Chef V Cleanse.

If you don’t know the difference between the two: Bone broth is animal bones with herbs and spices cooked in water for 24 hours in a slow cooker. The long-simmering process of bone broth releases collagen protein from the bones.

I admit that there’s a lot of hype surrounding bone broth and collagen protein. There are claims that it can cure just about everything.

There is research, however, that shows supplementing with collagen protein can help repair your gut. Gut health is crucial for burning fat. It’s not easy to get ready for a summer slimdown if you don’t have a healthy gut.

In fact, some people have a condition that’s known in the alternative medicine field as “leaky gut.” Leaky gut is when the tiny junctions of your gut lining tear, allowing undigested food particles to enter the bloodstream. When this happens, your detoxification system  slows down. Not only that, leaky gut can also cause an autoimmune disease.

Sipping on some fresh bone broth every day can help repair your gut and improve your body’s detox system. I do not believe in store bought bone broth, it is like trying to get your vitamins from Hi-C. Store bought bone broth is not real bone broth and does not have the same benefits. The only way to get the full benefits of bone broth is fresh made or fresh bought. It should expire in a week.  An alternative to bone broth is to take a collagen protein powder supplement.

#3: Probiotics

I’ve mentioned probiotics at least a couple times recently, including the best one to bring with you if you’re travelling.

I’ll just quickly rehash here why probiotics are so important for getting or staying lean. The healthier your gut microbiome (the trillions of bacteria, etc.), that is the more friendly bacteria you have in your gut, the easier it will be to digest your food. And the easier it is to digest your food, the less likely it will be that you’ll have difficulty getting rid of unwanted body fat.

There are a few problems with probiotics….

First is that many people forget to take them everyday. Set yourself a daily reminder on your smartphone to take them in the morning or before bed.

Second, some people don’t buy a strong enough probiotic. Look for a supplement that has several different strains of bacteria and has a minimum count of 10 billion colony forming units (CFU) per capsule. The reason you need a high count is that a lot of the bacteria won’t survive the harsh trip through the digestive system.

And third, not all brands of probiotics are of good quality. Do your research before you buy. My favorite is Bio-K – they have a dairy or non-dairy version and it is fresh.

I’m sure you already know about using CBD oil for weight loss. Same goes for Intermittent Fasting, which is probably one of the biggest health trends right now.

But here’s a weight loss phenomenon you may not have heard about: DNA testing.

Almost everybody knows that you can easily find out what your ethnicity is by taking a genetic test from companies like Ancestry.com and 23andme.com, the latter of which is so-named because human cells contains 23 pairs of chromosomes, those proteins that provide specific instructions that make you, uniquely you. (The 23rd pair determine whether you’re male or female.)

Have you ever seen the TV series on PBS, Finding Your Roots? I love it. If you’ve never seen it, check it out. It’s hosted by Harvard professor, Henry Louis Gates, Jr., who on each episode, sits down with celebrities and presents them with a “book of life,” which is basically a family tree prepared by professional genealogists.

Imagine the shock and horror that befell Seinfeld- and Curb Your Enthusiasm-creator Larry David when he learned that he has slave-owning Confederate ancestors who lived in Alabama!

Beyond learning about your ancestral history (and potentially discovering fascinating or even embarrassing secrets about your family tree), DNA testing may also reveal the best way for you to lose weight.

I recently read a couple different accounts of getting DNA testing done to learn what type of exercise, diet and supplements are best for weight loss. I’ll sum up for you what I think about this new health trend that’s certainly going to become just as popular as CBD oil, intermittent fasting, and golden milk

Genetic Testing for Weight Loss: How Does It Work?

When I was growing up, DNA testing for ancestry seemed like something out of a science fiction movie. But nowadays, it’s pretty commonplace. All it takes is a little bit of saliva and about $100 for the test.

In addition to genetic testing for ancestry, DNA tests can reveal potential disease markers that you’re carrying, such as sickle-cell anemia.

But genetic testing for weight loss? How is that even a thing?

Here’s how it works … at least in theory.

Just like your DNA can reveal which chromosomes you share with certain ethnic group, your genes can reveal, for example, what type of exercise will make you look better in jeans. Sprinting or long-distance running? Cardio or weight lifting? How do you know which is better for you, to help you lose weight?

This is the type of info that the first wave of “genetic fitness” companies are offering.

How do these genetic research companies know what type of exercise is better for you?

For starters, each person has a different composition of muscle fiber. Some people have more of what are called “fast-twitch muscle fibers” while other people have a greater amount of slow-twitch muscle fibers. For those with more fast-twitch muscle fibers, high-intensity interval training that involves sprints may be better for weight loss. On the other hand, slower-paced exercise would be better for someone with more slow-twitch muscle fibers.  

Think of it this way: there are different yoga styles. Someone who is out of shape and overweight probably shouldn’t try an Ashtanga class. And according to these first-0n-the-scene genetic fitness companies, exercise isn’t a one-size-fits-all solution….

DNA Testing for Diet & Supplements

You may have heard of the Blood Type Diet, which, for example, suggests that if you’re let’s say a Type O blood type, you should eat a  high-protein diet, heavy on lean meat, poultry, fish, and vegetables, and light on grains, beans, and dairy.

It’s pretty easy to find out your blood type. Your doctor can order a test for you.

And now, it’s almost as easy to find out what vitamins and minerals you may deficient in. The way it works is your regular doctor can submit your DNA tests to a company called PureGenomics, which will analyze your DNA and provide recommendations on what foods you should eat as well as supplements that may improve your overall health.

But let’s say you have an extra two- or three-hundred bucks to spend…. should you spend it on genetic testing in hopes that the recommendations you’ll receive will help you lose weight?

Sorry, but from the reports I’ve read on DNA testing for weight loss, the science behind it is very much still in the early phases; although it’s promising, it seems like it’s got a while to go before it’s accurate enough for it to be worth it.

So until then, I’m going to stick to what I know works for weight loss, for everybody:

  1. Green Drinks (very rare is the person who doesn’t benefit from getting more leafy greens in their diet)
  2. Avoid added sugars as much as possible
  3. Managing stress through meditation, yoga and mindfulness practices
  4. Intermittent Fasting and occasional Cleanses
  5. Being active almost every day of the year and getting enough sleep

The future of genetic testing for weight loss seems within grasp. But until the science evolves more, to me, it’s still the realm of science fiction….

Using MCT Oil For Weight Loss? Here’s 5 Reasons To Think Twice.

MCT oil is all the rage in the keto and low-carb community. But if you’re thinking about swallowing spoonfuls of MCT oil, certified nutritional therapist and founder of ChefV.com, Veronica Wheat, has a warning…

Imagine eating all the ice cream you want and never getting fat. (Or at least fatter.)

Sounds like heaven, right? 

Well, MCT oil is that fairytale fat. That’s because it doesn’t get stored as body fat? 

And there’s even more incredible selling points about MCT oil. With promises of fast weight loss, boundless energy, faster exercise recovery, lower inflammation and enhanced cognitive function, it’s no wonder MCT oil has become popular over the last few years. Especially in the keto diet and low-carb community. 

Without doubt, MCT oil may be extremely beneficial for some people. But for others, could it be a ticking time bomb? 

In this article, I’ll cover the basics of MCT oil plus I’ll list some of the surprising reasons it could potentially backfire on your health. I don’t mean to scare you, if you’ve been using MCT oil for some time. Just consider the following info food for thought…

MCT Oil & Coconut Oil

If you’ve been following my recipes over the years, you know I should have started my own coconut oil company. I use a ton of coconut oil and love it so much I even named my dog Coconut. Years ago, long before I was carrying a baby in my belly which I’m blissfully doing now (nausea excluded), I traveled to Bali and Thailand, where I took cooking courses. When I got back one of the first things I did when I got home was hit Costco and fill my trunk up with coconut oil so I could recreate all those scrumptious Southeast Asian dishes.

Coconut oil makes many cardiologists squirm. That’s because it’s made up of about 90% saturated fats. Saturated fat has long been considered the Dr. Evil of nutrition. 

But here’s the thing. Unlike red meat and other animal products, all of which have a ton of saturated fat, coconut oil contains a special kind of fat. Hello, MCT. 

What is MCT Oil?

MCT stands for medium-chain-triglycerides. Over 50% of the fat in coconut oil is MCT fatty acids. (Fatty acids are the building blocks of fat, just like amino acids are the building blocks of protein.)

Now, I hope I don’t put you to sleep with a boring biochemistry lesson. So I’ll keep this simple. Basically, the fat you eat in animal products consists of long-chain fatty acids. (Snoring yet?) Long chain fatty acids get stored as body fat unless you’re running a marathon. 

But the neat thing about MCT fatty acids is that they don’t get digested in your small intestine. Instead, they get processed in the liver. To your body, MCT is like a Starbucks venti latte. It’s a quick burst of fuel for your body, especially your  brain. 

Rather than eating a huge bowl of pasta to fuel up for a workout (that’s the old-school way), you can use MCT oil for sustained energy. That’s why MCT oil has become popular in functional coffee drinks.

Unfortunately, your brain can’t rely on caffeine for fuel. But it can use MCT oil for energy. That’s because MCT oil is an external source of ketone bodies. 

When you keep carbohydrates low, your body and brain can use ketone fatty acids (also called ‘ketones’ or ‘ketone bodies’) for energy. 

Remember: sources of ketones like MCT oil, for the most part, don’t get stored as fat. This is what leads to rapid weight loss and the other possible health benefits of the ketogenic diet such as a reduced risk of developing neurodegenerative diseases like Alzheimer’s.

(Fun fact: There are four main types of fatty acids in MCT oil: caproic, caprylic, capric and lauric acid. Coconut oil is abundant in lauric acid.)

All great stuff. But before you load up on MCT oil there are some things that may lead you to reconsider. 

Reason #1 MCT Oil Might Be Overrated: It’s Not Natural 

While medium chain fatty acids like lauric acid in coconut oil are 100% natural, MCT oil is not. (In nature, MCTs are also derived from palm kernels.)

MCT oil hasn’t been around for that long, all things considered. In fact, the National Institutes of Health says that MCTs were first extracted in the 1950s. The first MCT oil product wouldn't be introduced to the market until decades later (thanks to the Bulletproof Coffee craze).  

The truth is that MCT oil is an industrial product. It’s not a naturally-expressed oil. Naturally-expressed oils don’t need heat or chemicals to be extracted. But many MCT oils you see on supermarket shelves require harsh chemicals and solvents to extract the oil from the coconuts and palm kernels. 

Chemicals that I don’t want my baby exposed to such as hexane are used in the extraction of MCT oil. Not only that, some manufacturers use corn oil to make MCT oil. Corn is one of the most highly-inflammatory oils. 

The difference between many store-bought MCT oils and expeller-pressed olive oil is like the difference between Chef V Organic Green Drink and name-brand juices. Chef V’s is made fresh without the use of high-heat pasteurization (HHP), which basically kills most of the nutritional value. Big name juices? Yup, they’re making a killing by killing the nutrients via HHP. But I digress. 

Honestly, I don’t know what the long-term effects of MCT oil are. And I don’t think anybody does. Even though it’s been shown to speed up the weight loss process if you ditch most of your carbs, I’d still take it easy on it.

MCT Oil Warning #2: Detox Danger

Very few people have problems digesting coconut oil even though it’s loaded with saturated fat. But if you dive in the deep end with MCT oil it could clog up your liver. Remember I said that it’s your liver that mostly processes MCT oil instead of your digestive organs? Well, let’s say your liver is sluggish to begin with.

If you consume too much MCT oil, your liver may freak out and send the contents back into the digestive system. If this happens you may find yourself running to the bathroom with loose stools. 

And more seriously than diarrhea, anybody with any liver problems should absolutely stay away from MCT oil. 

MCT OIL Warning #3: A Heart Attack In The Making?

Does the high saturated fat content of MCT oil pose a risk for heart disease? Honestly, most studies on MCT oil say it’s not really a big risk. For instance, a review of several studies in the Journal of Nutrition concluded:

“MCT oil does not affect total cholesterol, LDL cholesterol, or HDL cholesterol levels, but does cause a small increase in triglycerides.”

Higher triglycerides, which are fats in the blood, is not good. But overall, not a huge problem.

Unless…

…You’re someone who carries a genetic mutation called APOE4. 

The APOE4 gene is associated with an increased risk of cardiovascular and neurodegenerative disease such as Alzheimer’s. Roughly 20% of people carry a copy of this gene. And 2% to 5% carry 2 copies. Even if you only have one copy, your risk of developing Alzheimer’s doubles, says research from Stanford University. If you have 2 copies, well, let’s just say you should put down the jar of MCT oil right away!

Again, not to scare the bejeezus out of you. But it’s interesting that one of the biggest supposed health benefits of MCT oil is that it can prevent brain disorders. 

However, it’s possible that for some people with a mutation of the APOE4 gene, consuming MCT oil could contribute to heart disease. Or Alzheimer’s. 

Getting lab work done is the only way to know for sure if you have this genetic mutation. I say that’s worth splurging for if you plan on using MCT oil. 

Having certain variations in the APOE4 gene can mean your body doesn’t do a good job of clearing cholesterol from the blood. MCT oil could potentially lead to a heart attack or stroke 

According to a website dedicated to all things APOE4, if you have this genetic mutation, stick with a high-quality caprylic oil. (Also called C8 oil). This is because it doesn’t impact cholesterol in the blood as much.

MCT Oil Warning #4: Avoid When Baby Is On Board

In researching this topic, I stuffed my MCT oil in the back of the pantry. That’s because I read that it might not be safe for expecting or breastfeeding moms. It isn’t advisable for people with essential fatty acid deficiency.

Reason To Avoid MCT Oil #5: Insulin Resistance

I’ll probably get a lot of heat for this one, so let me just say I totally admit that this next warning is controversial. You see, there’s so many non-scientific articles that claim that MCT oil is great for people living with diabetes because it can help regulate blood sugar levels. 

But the thing is there are some studies that suggest that MCT oil can actually induce insulin resistance. This means that the body has to release more insulin to remove sugar from the blood and drive it into the cells. Now, the study I linked to was a tiny one. So take this with a grain of salt. 

The important takeaway is that if you have diabetes you should speak with your doctor before going hardcore Keto and using MCT oil. 

Conclusion

No doubt there are thousands of people who have gotten leaner and feel great thanks to using MCT oil. MCT oil is an external source of ketone fatty acids that your brain and body can burn for energy instead of carbs (sugar). Your body doesn’t process or store MCTs like it does other fatty acids. That’s why it’s a special type of fat that’s become a godsend for low-carb dieters. 

But as the saying goes, one man’s food is another man’s poison. Whether MCT oil is medicine or poison for you largely depends on your genetics. Before you start using lots of MCT oil, get some lab work done to see if your genes (and skinny jeans) will benefit from it. 

Finally, don’t use MCT oil to cook with. It’s got a low smoke point and spoils more easily. Also, if MCT oil causes your belly to rumble, try using MCT powder.

Green Drinks For Weight Loss: Make It A Daily Habit

Proof Green Drink Works for Weight Loss

So here’s the truth and the proof about Green Drinks for weight loss….

Let’s start off with this study on kale. Besides numerous beneficial effects on health, it lowers your blood sugar levels after a meal. What does that mean for weight loss?

When blood sugar levels are high, your cells can no longer allow sugar from the bloodstream to enter. And as a consequence, the excess sugar gets stored as fat by the liver.

Unless you plan on doing several rounds of sprints or go for a long-distance run, that extra fat’s going to go where you least want it.

For this reason, kale is considered a superfood for people with type 2 diabetes.

Green Drinks for Good Gut Bacteria

Remember I was saying that when you eat a donut or other junk carb in the morning (or anytime of day), it feeds yeast in your gut? More specifically, it causes yeast to proliferate (multiply in number). And what this means is that you’ll end up with too much bad bacteria in your gut.

But this study proves a vegetable juice-based diet improves gut health. In the study, the participants consumed only a vegetable/fruit juice blend for three days. On the fourth day, the researchers observed a significant decrease in weight and body mass index.

And this weight loss was maintained until day 17. The only reason it wasn’t sustained for longer is that from day 4 onwards, the participants resumed their normal diet.

In addition, by day 4, the researchers noticed less harmful strains of gut/stool bacteria and more beneficial bacteria. Having enough friendly critters in your gut, as creepy as it may sound, is necessary for sustained weight loss.

Here’s one more study I’ll leave you with for now. It says that diets containing green leafy vegetables improve liver fatty acid profiles. The study is the first one to prove how green leafy veggies improve the liver health in animal predisposed to developing hypertension.

Your liver has to be in optimal condition in order to properly detoxify and break down dietary fat. If you have a “sluggish” liver, you’ll have trouble losing weight.

One of the green veggies in the study is collard greens, which is in my Green Drink. The study concludes that green leafy veggies not only improves liver health but also lowers the risk of cardiovascular disease and high blood pressure.

Bonus points for Green Drinks! And all it takes as drinking one bottle a day. That’s one of the easiest, most affordable weight loss strategies you’ll ever find.

Mason jars are my favorite accessory. I use them every chance we get – filling the empty jars with fresh cut flowers, refreshing drinks or a variety of veggies for delicious salads on the go.

Below I share with you my foolproof guide for creating the best and most nutritious mason jar salads that you – and your kiddos – will love, as well as three of my go-to mason jar summer salad recipes. – Veronica

How to Build the Perfect Mason Jar Salad

  1. The Dressing. Add about 2 tbsp or less
  2. The Veggies. Select ones that won’t absorb the dressing (i.e. onions, carrots, beans, snap peas, etc.)
  3. The Fruit (or more veggies). Another layer of your favorite fruit or veggie
  4. The Grains. Add 1/4 to 1/2 cup of cooked and cooled quinoa or rice
  5. The Greens. Add about a cup of your favorite leafy greens
  6. The Protein. Top it off with your choice of protein – nuts, cheese or meat

Layer all ingredients from bottom to top. Start with the dressing on the bottom. If using chicken or other meat, add it to the jar the morning you want to eat it.

Chef V’s Garden Salad

  • 1 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1/4 cup garbanzo beans or kidney beans
  • 1 tbsp chopped green onion
  • 1 tbsp fresh chopped cucumber
  • 1/4 cup chopped apple (i.e. Fuji, honey crisp or gala)
  • 2 thinly sliced radish
  • 1 cup lettuce (spinach, mixed greens, kale, etc.)
  • 1/4 cup grilled chicken (optional)

Directions: Layer all ingredients from bottom to top. Start with the dressing on the bottom. If using chicken or other meat, add it to the jar the morning you want to eat it.

Chef V’s Mexican Salad

  • 1 tbsp Chef V’s Spicy Cilantro Dressing (see below)
  • 1/4 cup black beans
  • 1/4 cup chopped mango
  • 1 tbsp chopped green onion
  • 1/4 cup cooked and cooled brown rice
  • 1 tbsp fresh chopped cilantro
  • 1 cup fresh arugula or spinach
  • 2 tsp raw pumpkin seeds
  • 1/4 cup grilled chicken (optional)

Directions: Layer all ingredients from bottom to top. Start with the dressing on the bottom. If using chicken or other meat, add it to the jar the morning you want to eat it.

Spicy Cilantro Dressing

  • 1/4 cup fresh lime juice
  • 1/2 small jalapeno
  • 1/2 cup olive oil
  • 1/2 cup fresh cilantro
  • 1/2 cup filtered water

Directions: blend ingredients together in a Vitamix or blender for 1-2 minutes until well blended.

Chef V’s Thai-Noodle Salad

  • 1 tbsp Chef V’s Spicy Cilantro Dressing (see above)
  • 1 tbsp chopped green onion
  • 1 tbsp shredded carrot
  • 2 tbsp chopped fresh cucumber
  • 1/2 cup cooked and cooled brown rice noodles
  • 1/2 cup green cabbage
  • 1 tbsp fresh cilantro
  • 1 tbsp fresh mint
  • 1 tbsp chopped raw cashews
  • 1/4 cup grilled chicken (optional)

Directions: Layer all ingredients from bottom to top. Start with the dressing on the bottom. If using chicken or other meat, add it to the jar the morning you want to eat it.

Sometimes when we’re invited to a dinner party and eat something we don’t normally have, toots happen. It’s a part of life. Nonetheless, flatulence is embarrassing. But turmeric is a potent fart-fighter! The very uncomfortable post-meal combo of gas and bloating can be greatly reduced just by adding a teaspoon or two of turmeric.

Turmeric may prevent embarrassing gas and uncomfy bloating because it helps digest fats. It also helps your belly keep its supply of stomach acid. Many digestive problems are caused by not having enough digestive juices to break down food.

I realize it might not be practical for you to carry a bottle of turmeric spice in your purse to a dinner party. But you can easily drink some tea or a smoothie before you head out for the night. You can also take a turmeric supplement before the dinner party.

Keep in mind turmeric is fat-soluble. That means you need to consume a little fat in order for your body to absorb turmeric. That’s not a problem if you’re adding it to a meal. But if you’re having a smoothie, make sure you add a tablespoon of olive oil or other healthy fat.

My next favorite spice for digestion also helps your body absorb turmeric….

Black Pepper

Without black pepper, your body doesn’t absorb turmeric very well. But adding just a pinch or two of this ingredient, fresh ground black pepper, can increase your body’s absorption of turmeric by 2,000%!

Not only that, there’s something in black pepper called piperine, which is great for digestion. It helps you break down all the tryptophan and other amino acids in holiday turkey. It also helps you get rid of excess water and it stimulates your belly’s release of hydrochloric acid, the main digestive juice in your gut.

But to get your belly feeling better with black pepper, don’t cook with it. Just sprinkle some fresh ground pepper corns in your tea or on your food.

Ginger

ingredients: Ginger is Mother Nature’s weapon against indigestion, stomach pain and nausea. When I go for sushi, I always ask for extra ginger. Not only does it cleanse the palette in between bites of a rainbow roll, it’s also great for digestion. It helps move food through the digestive tract so all that rice and fish in the sushi doesn’t just sit in your gut for hours, leaving you bloated and gassy.

Here’s an easy digestion hack you can try with ginger that’s been used for thousands of years in India’s ancient traditional system of medicine (Ayurveda): try eating some fresh ginger slices about a half hour before your meal. This will activate your digestive fire. Or better yet, have a cup of ginger tea.

(If you take a blood-thinning drug, don’t use too much ginger as it can negatively interact with the medication.)

Cardamom

I do love me a cup of low-sugar chai tea. Each sip delightfully awakens my taste buds. But more than that the ingredients in chai tea like cardamom are great for digestion. Cardamom is like ginger’s cousin. Like ginger, it can help prevent gas and bloating. There’s also some research that shows it can help if you have IBS (irritable bowel syndrome). Not only that it can help if you have belly cramps, diarrhea or constipation.

If your bottle of cardamom spice is gathering dust in your pantry, move it to front and center of your spice rack. And if your local coffee shop can do a low-sugar chai spice tea, go for it. Besides cardamom and cloves, traditional chai spices also include ginger  black pepper, and cinnamon.

Speaking of which, here’s the final of my favorite spices for digestion….

Cinnamon

Cinnamon is an ingredient miracle. Not only can it make bland oatmeal taste great, it’s also good for digestion. It can help with indigestion, gas, heartburn, nausea and stomach cramps. Now, obviously, sprinkling cinnamon on stuffing, turkey or mashed potatoes is … let’s just say, weird.

But what you can easily do, if you know you’re going to be indulging, before you head out for the big holiday meal, is make a cup of tea and sprinkle some cinnamon in it. Or, you can make yourself a cup of Golden Milk.

Golden Milk (click here for my recipe) is a dairy-free drink that I make with almond milk and features several of the spices above. My recipe for Golden Milk includes turmeric, ginger and cinnamon, and of course, a pinch of fresh ground black pepper.

If you’re going to indulge a little, no worries, you’ll get back on track. Just make sure to start using these spices every day to help you digest those heavy meals.

Don’t be so ‘Resistant’ to Eating These Carbs

I used to be a carb shamer.

I mean, other than trans fats, carbs are the worst thing for health, right? You don’t have to be a certified nutritional therapist like yours truly to understand that out of the 3 macronutrients, carbs have the highest impact on blood sugar and insulin. (Eating a lot of animal protein can also raise insulin.)

Carb-phobia is why I flirted with ultra low carb diets like keto. But after feeling awful switching to keto, you couldn’t pay me enough to swear off carbs again. Life’s too short to feel miserable.

The fact is that 99% of Americans can’t live without eating grains (which are carbs). Not because grains are necessary for survival, because they aren’t. You can go the rest of your life consuming carbs from only fruits and vegetables (which are technically carbs, too). But how realistic is it to eat grain-free for the rest of your life.

That’s why I’m excited to tell you about the healthiest carbs that aren’t fruits and veggies. They are called resistant carbs and I encourage you to get lots of them in your diet.

In fact, there’s one simple trick I’ll show you in just a bit that transforms one of the worst carbs for your health into a much healthier one.

What Are Resistant Starches? 

The reason why the most common grains and high-starch carbs are bad for you is that they quickly convert into glucose (sugar) in the small intestine. This drives blood sugar levels higher and causes a release in insulin. And it’s the reason why even though sushi is one of my favorite foods, I don’t get it that often. That’s because I feel like white rice gets digested too quickly. Then, after spending $100 on a sushi meal, I’m hungry a mere two hours later.

(Keep reading because the simple trick I teased above turns even white rice into a healthier carb choice!)

Unlike quick-burning carbs, resistant starches (examples below) don’t get digested in the small intestine. Instead, they pass into the large intestine where they ferment. This fermentation creates prebiotic fiber. (I just checked out my nutrition articles; can’t believe I haven’t written about prebiotic fiber. I’ll add that to my to-do list.)

Prebiotic fiber, also called “prebiotics,” have all the makings of a new health trend, and for good reason. Prebiotics are the food that fuels your healthy bacteria (probiotics) in your gut. You can swallow probiotics until you’re blue in the face and bloated in your gut.

But you can’t colonize your gut with healthy bacteria if the microscopic friendly bugs don’t have anything to feast on.

Besides, many probiotic supplements might be a waste of money. This is because the overwhelming majority of bacteria in the capsules die before reaching the large intestine. Having a healthy gut is vital for immunity, mood, digestion and basically all other functions.

Could it be that eating carbs is the answer for obtaining gut health? Maybe, but only if you’re eating resistant carbs.

More Reasons To Be Less Resistant About Eating Carbs

When you eat lots of prebiotic fiber, it makes you feel full. Feeling full of fiber prevents cravings for unhealthy carbs (basically, anything that contains white or wheat flour) that I will still shame you for eating. (Just kidding. Do what you like. I’m not really a shamer. I just help people get their daily dose of leafy green veggies in the easiest, most affordable and convenient way.)

If you need to improve your health metrics, you’ll be happy to know resistant starches also lowers cholesterol and is associated with a lower risk of developing colon cancer.

Best Resistant Starches

If you love bagels, cookies, muffins, bread and other baked goods, sorry, these aren’t on the list of best resistant starches. However, as I promised, in the next section, I’ll reveal a way to make a couple common carbs more resistant to digestion.

Do you remember this song from your childhood:

“Beans, beans, they’re good for your heart, the more you eat, the more you…”

You can fill in the blank yourself. The good news about beans and lentils (which are in the family of legumes) is that many varieties are high in resistant starch. Some people who have type 2 diabetes are concerned about the high amount of carbs in beans. But I think, considering the amount of fiber and resistant starch (a double dose of fiber, really), beans are perfectly healthy for those living with diabetes. Just make sure to closely monitor those A1C levels before and after meals.

The bigger concern with beans is that they contain anti-nutrients, which interfere with your body’s ability to digest and absorb minerals. A simple thing you can do to greatly reduce these anti-nutrients is soaking the legumes overnight in water.

More resistant carb sources:

  • Unripened bananas
  • Peas (especially shriveled ones; peas are also legumes)
  • Barley
  • Raw potato starch
  • Glucomannan flour
  • High-maize flour (corn)
  • Arrowroot starch
  • Corn starch (buy organic for the same reason as oats)

How To Make Starchy Carbs More Resistant To Digestion

So what’s a potato, pasta and rice lover to do? These staple carbs aren’t on the best resistant starches list….

But here’s how you can get them to be.

Simply cook them and let them cool overnight in the fridge. Then you can simply reheat them. And voila, you’ve got what otherwise would be a blood-sugar-spiking carb transformed into one that is actually good for your gut! The same goes for sweet potatoes and corn tortillas!

Cooling simple starches like white rice overnight changes the molecular structure of the carbohydrate chains. Science magic!

Of course, as the diet professional I am, I should leave you with a warning to moderate your portion sizes. But that’s how life should be lived, enjoying your favorite foods without overdoing it.

Could Flossing Be The Secret To A Killer Bikini Bod?

I’m bringing sexy back … by flossing. 

I know, I know, flossing is like the least sexiest thing in the world. And when you’re dead tired and can’t wait to get in bed, it’s the last thing you feel like doing. 

But no matter how tired you are and how much you may detest the disgusting sight of food particles dislodging from your mouth, becoming airborne and sticking to your mirror, I want you to become a fanatic flosser. 

So what does flossing have to do with sexy? 

Flossing prevents systemic inflammation build-up in your body. 

In a nutshell, if you don’t floss, harmful bacteria in the gums can migrate to distant organs including the brain and heart. 

Again, what does this have to do with sexy? 

Well, your ability to lose unwanted body fat depends largely on your body’s overall response to inflammation. 

If you have elevated levels of inflammation, it’s going to be harder to lose weight. It’s that simple.

Flossing For Weight Loss

When you hear the word “infection” what comes to mind for you? Most people associate symptoms like fever, burning, itching, etc. But sometimes infections are imperceptible. And if you don’t floss, your gums will become inflamed. This is called gingivitis. Gingivitis is caused by a bacterial infection. And this bacterial infection is caused by not being a diligent flosser. 

So, let me be a lecturing momma to you: floss not just every day before bed but after every single meal. If flossing three times a day sounds too demanding, do what I do: do intermittent fasting, skip breakfast and have an Organic Green Drink. Then, just eat one or two large meals the rest of the day and try not to snack. If one meal a day isn’t enough, try having another Green Drink in the afternoon or a protein smoothie with non-dairy milk.

Flossing For Blood Sugar Management

I admit the real reason I floss religiously is not for weight loss but to prevent bad breath. I bet you dollars to gluten-free vegan donuts that if you come across anybody with kickin’ breath, they’re not a fantastic flosser. 

But if you are struggling with weight management, be honest and ask yourself, “Have I been flossing as much as I should be?” Skipping a night of flossing here or there may not seem like a big deal. But think for a second of the bacteria that can build up in your mouth if you let food stay trapped in between your teeth. It’s so gross to think that the natural bacteria in your mouth feed off the sugars from the food and drinks you consume. Yuck!

Personally, I don’t take any chances with bacteria buildup in my mouth. That’s why I floss after every meal (OK, I’m only human so like 98% of the time.)

If you don’t floss enough, the infection caused by the sugar-loving bacteria can elevate your insulin levels and increase body fat storage.

Brush Your Teeth After Every Meal To Stay Sexy

Don’t forget to brush your teeth after every meal as well. Many people brush their teeth first thing in the morning. But to me that doesn’t make much sense to brush if you don’t eat anything in the morning. What I do instead is use a natural mouthwash to freshen my breath and eliminate any potentially harmful bacteria. Then, after my first meal of the day (usually around brunch or lunch time), I’ll brush. 

If you don’t brush after every meal, tartar can accumulate along your gum line. And it’s along the gum line that an overgrowth of bacteria can cause gingivitis. And if you don’t do anything to nip it in the bud, not being able to lose weight easily won’t be your only health concern. 

That’s because gingivitis can progress to periodontitis. That’s when little pockets develop between the teeth and gums. At this point, the harmful bacteria go on the warpath, attacking the cardiovascular system. (Which is why it’s important to get way more vitamin C in the diet than the daily recommended 65 mg.)

Massage Your Gums In The Shower

One of the best things you can do for your gums other than flossing is using a waterpik, which jets a high-pressure stream of water in between your teeth and gums, dislodging any stubborn food particles and plaque buildup. If you don’t have a waterpik, a simple thing you can do is when you take a shower, put the shower head on the massage setting and open up your lips to expose your pretty pearly whites and gums. 

Obviously, there’s much more to successful weight loss than flossing. But many people don’t realize the connection between flossing and inflammation prevention. Adding flossing to your daily health routine may help you prevent unexplained weight gain.

3 Tips For Eating Right If You’re Working From Home

If you had an office job pre-pandemic, you probably only ate when everybody else took their lunch break and maybe a quick afternoon snack. But now that so many of us are working from home, temptation is just around the corner all day long. Chef V’s got some tips for you to slim your waistline in no time. Here are 3 tips for eating right while working from home...

I know a thing or two about being tempted by food at the workplace. After all, I was a private chef for many years. That’s where my name, Chef V—aka Veronica—comes from. (I’m a marketing genius.) 

Anybody who has ever had a food job be it server, line cook, head chef or cashier knows all too well that gnawing feeling in your belly when you have to pull a long shift and you don’t have time to even pop a crumb in your mouth.

But then, after that long shift is mercifully over, you overcompensate by stuffing your belly until it feels like it’s going to pop like a balloon. 

These days, however, probably just like you, I’ve been working from home more often. And when you’re just steps away from the kitchen with no boss breathing down your neck and no time constraints save for the occasional Zoom meeting, the kitchen beckons like an inviting pool of mud to a pig. 

When you’re absentmindedly snacking all day and then continue snacking at night while getting your Netflix on, it’s so easy to gain weight. So here’s my tips for preventing overeating and gaining weight while working from home. 

#1: Give Intermittent Fasting A Try

One of the reasons my hubby, Brandon, and I have kept the weight off while working from home is we doubled down on intermittent fasting during the pandemic. Intermittent fasting not only works for weight loss, it makes your mind sharper and may even support your immune system and prevent infection as this study suggests. 

I’m not saying that if you do intermittent fasting, you won’t get COVID. But it’s interesting that some immunologists are exploring its protective effects. How intermittent fasting supports the immune system is the same way it can help you prevent weight gain while working from home. 

You see, when you don’t eat anything for 16 hours—the best way to do intermittent fasting is to limit your calorie-intake window to 8 hours a day, i.e. 12 noon to 8 p.m.; Brandon and I shoot for a 17-hour fast most of the time—your body starts repairing itself. Digestion takes a ton of energy. By giving your digestive system a rest, your body can focus on fixing itself. This process is known as autophagy. 

Technically, autophagy does not directly contribute to weight loss. But by making your metabolism more efficient, fasting can lead to weight loss. And the great thing about intermittent fasting is that if you feel like snacking while working from home, you don’t have to feel guilty about it. As long as you’re eating during your 8-hour window, snack away.

#2: Lose Weight Working At Home By Eating More!

If you work a normal 8 or 9 to 5 day, your first main meal will be at around noon. Actually, before your first meal of the day, I recommend drinking some water with trace minerals to keep your energy up first thing in the morning. You can also have green tea or unsweetened black coffee if you must have your caffeine fix. Then, between 11:30 to noon, break your fast with Organic Green Drink

By having 8 to 16 oz of Green Drink, you’ll gently awaken your digestive system and flood your cells with high-nutrient-density leafy greens. 

After having your Green Drink, wait about 15-30 minutes, then go to town. Have at it. Eat all you want until your belly is full but not too stuffed. By eating a large meal, you’ll eliminate the temptation for frequent snacking. Like I said, snacking during your 8-hour eating window isn’t a nutrition faux-pas. But in general, it’s good to give your insulin-secreting pancreas a rest in between meals as well as your other digestive organs. 

If you eat your first main meal at noon, I recommend having your second large meal early in the evening like at 5 or 6. Your last meal can then be a light but satisfying one like yogurt with nuts and berries. 

Many people make the mistake of not eating enough at their main meals. This is what leads to over snacking in between meals and late-night snacking, which is terrible for your metabolism. Eating too often prevents your gut bacteria from being able to be swept down from the small intestine into the large intestine (colon). See my article on SIBO for more on this subject.

#3: Are You Hungry Or Just Bored? 

True hunger is when you’ve gone 16 hours or longer without food. If your stomach is sending signals to your brain while you’re working that you’re hungry, don’t listen to the message right away. 

Your brain—and belly—could be the victim of a false signal. This is especially true if it’s only been two or three hours since you last ate. If your last meal was large enough and contained the correct ratio of macronutrients (a little bit of healthy fats like avocado, and sufficient protein and low-starch carbs like quinoa and veggies), then you shouldn’t need to eat more food. 

You can satisfy your sweet tooth after a meal by having a large handful of berries and a tiny piece of dark chocolate. This is why I emphasized eating a big meal above. 

But if you’re accustomed to snacking every couple hours while working from home, it’s probably not true hunger you’re experiencing. What’s likely happening is that the yeast in your gut loves feasting on the sugars in your small intestine, from the crackers and other carb-heavy snacks. And after the yeast digests your yummy snack, it will tell your brain to feed it some more. After all, your brain and gut operate in a continuous feedback loop (no pun intended). 

If you feed your gut low-sugar, low-starch foods, the yeast in your gut won’t proliferate; it will be kept in check by your friendly bacteria. And that means your belly—when properly nourished—won’t send your brain a signal to snack yet again. 

Conclusion

If you want to avoid overeating while working from home, do intermittent fasting, eat one to two large meals during working hours and learn to differentiate true hunger from boredom and habit. If you do feel hungry, drink a tall glass of water with a squeeze of lemon juice and go for a quick walk. I bet you’ll go back to your work feeling refreshed and not hungry.

Can CBD Oil Help You Lose Weight & Feel Great?

Move over, coconut. You, too, avocado and olive. The latest, greatest oil I’m making room for in my kitchen is CBD oil. It’s extracted from the marijuana plant, but don’t worry because it won’t get you high. That is, unless you experience the natural high you’ll feel from the relief of pain, insomnia, anxiety, and the other potential benefits CBD oil may offer. Just make sure it’s legal in your state!

A few weeks ago, I described the stress I was experiencing opening a new commercial kitchen in New Jersey.

But hey, it turns out New Jersey ain’t so bad. At least it’s one of the states where CBD oil is legal.

Too bad I didn’t get turned onto CBD oil last month. Brandon (my husband) and I could have really used a squirt of CBD oil in our Green Drinks to cope with the stress.

As a certified nutritional therapist, I could no longer ignore looking into the benefits of CBD oil. Now that we’ve had our grand opening for our new commercial kitchen, I’ve had the time to get back to one of my favorite extra curricular activities: geeking out on nutrition and natural health articles.

Sure, I’ve heard all the hype about CBD oil over the last couple years. But I wanted to see for myself if the glorified testimonials were legit.

Here’s what I found….

Limited Research But So Far Very Promising

If you’re not familiar with CBD, it’s one of over 100 chemical compounds in marijuana. THC is the compound in marijuana that makes you feel high. But CBD itself doesn’t have any psychoactive properties. In fact, it can counteract the effect of THC.

And that’s a good thing, considering that CBD seems to offer the most benefit when it’s combined with at least some THC. But here’s what we know about CBD oil thus far, although there’s a limited amount of research. It helps to:

  • Reduce the number of seizures caused by epilepsy
  • Fights inflammation
  • Lessen the severity of muscle spasms
  • Lower blood pressure
  • Ease anxiety
  • Normalize blood sugar
  • Help treat drug addiction
  • Aid in treating psychotic conditions such as schizophrenia

In addition, preliminary studies on CBD shows it possesses anti-tumor potential. One day, it might even be part of a regimen doctors use to fight Alzheimer’s and Parkinson’s diseases.

Another thing that really intrigued me about the potential of CBD I read is its ability to regulate metabolism and body weight. In fact, in one study on mice, it even lowered the incidence of diabetes. Granted that study wasn’t on humans, but, and excuse me if this sounds creepy, the protein-coding regions (the area from which we inherit our characteristics) of the mouse and human genomes are 85 percent identical. So, squeak, squeak, y’all!

Adding CBD Oil to Green Drinks

All this research on CBD is relatively new. That’s because CBD itself wasn’t extracted from the cannabis sativa plant (aka, weed) until just a couple decades ago.

But what if the preliminary research proves to be legit … could CBD help people lose weight?

We already know that certain fats can actually help improve your metabolism. Many CBD oil products contain coconut oil. That’s because coconut oil is very high in fat and CBD is fat-soluble. That means in order for you to absorb it, you need to combine it with fat. Coconut oil contains MCT’s, which stands for medium-chain triglycerides. Perhaps you’ve heard of MCT oil? If you haven’t it’s become popular because it’s good for both your brain and your metabolism.

(Two important side notes: be careful not to eat too much coconut oil if you have very high cholesterol. Also, don’t buy hemp-based CBD products like hemp seed oil because hemp contains far less CBD than cannabis-based CBD extract.)

So this got me thinking….

What if people starting adding CBD oil tincture to Chef V Green Drinks? I really think that adding a little bit of this therapeutic oil has the potential to help you lose weight. Plus, the fat from the coconut oil will help you feel fuller for longer.

In fact, if you’re doing one of my cleanse programs  adding some CBD may even enhance your cleanse. How? For starters, it will help you relax. And also, other research shows CBD can stimulate genes that can help you breakdown fat; increase metabolism and slow down new fat cell generation.

But is CBD legal where you live?

Truth be told, I’m not going to make CBD oil an ingredient in my Green Drink or feature it in my cleanse anytime soon. Primarily, it’s because according to federal law, CBD oil is still illegal.

But depending on the state in which you live, you might be able to buy CBD oil. I checked this source and here’s what I found….

If you live in these 6 states, where CBD in all forms is illegal, you’re out of luck: Idaho, South Dakota, West Virginia, Nebraska, Kansas, and Indiana.

As for these 16 states, you likely need a legit serious medical condition for buying and using it: Alabama, Delaware, Florida, Georgia, Iowa, Kentucky, Mississippi, Missouri, North Carolina, Oklahoma, South Carolina, Tennessee, Texas, Utah, Virginia, and Wisconsin.

However, in the rest of the states, you will likely be able to use CBD oil products with no problem. Currently, nine states allow recreational and medicinal marijuana. And 30 states have legalized medicinal pot.

Weed Wild Wild West

Just keep in mind that not all CBD products are created equal. And none are regulated by any federal guidelines (because it’s illegal).

Therefore, if you’re going to buy some CBD oil or any products with CBD (it’s even in lip balm these days), choose a brand that’s been 3rd-party tested for purity and strength. Lots of companies are trying to cash in on the cannabis craze. It really is a wild wild west green rush. And like the gold rush era of the mid 19th century, when lots of people got burned by speculators, lots of people are buying CBD products that contain very little CBD.

I should also mention that if you have a serious medical condition, of course, it’s always best to first check with your doctor or other health professional. And remember, the most therapeutic CBD seems to also include some THC. So go easy and start with a very low dose and scale up gradually.

Intermittent fasting might sound like a desperate weight loss starvation protocol to some, but it’s quite the opposite. In fact, you can eat until your belly’s content and still lose weight—but only within a specific window of time.

Move over Atkin’s. You, too, South Beach. Zone Diet: you’re so last decade….

The latest diet trend is intermittent fasting. Not familiar with intermittent fasting? After reading this, you’ll know the basic facts and health benefits of intermittent fasting (IF). And you’ll certainly be hearing about intermittent fasting more and more in the mainstream media. It seems poised to become just as popular as household-name diets, if not more so.

That’s because, first off, it’s not really a restrictive diet. And secondly, despite its relatively recent entry into the mega-billion diet marketplace, it’s actually thousands of years old.

There are a couple other primary reasons why intermittent fasting will likely surge in popularity. Peer-review research supports it for weight loss and other benefits. Furthermore, it’s really easy to stick to the diet, unlike many other popular weight-loss schemes. (Ahem, Master Cleanse, we’re talking about you.)

But let’s not get too far ahead of ourselves. First, let’s learn some basic facts about intermittent fasting.

Intermittent Fasting: how old is it?  

Although this may be one of the first times you’re hearing about IF, the practice of it dates back to prehistoric times. In fact, fasting as a practice is a mandate in holy texts such as the Old Testament and Koran.

The type of fasting in the Old Testament differs from that of the Koran. And this difference illustrates a couple popular ways of fasting. In the Old Testament, religious fast days (such as Yom Kippur) require adherents to the Jewish faith to abstain from all food and drink, usually for 25 hours (from sunset to nightfall). As for the Koran, holy book for over 1 billion Muslims, the holy month of Ramadan is an example of an intermittent fast. During Ramadan, observers eat only between nightfall and sunrise.

Intermittent Fasting: how do you do it?

There are a couple primary ways to do intermittent fasting for weight loss (religious overtones aside). First, is a calorie restriction diet. And it works like this: 2-4 days a week, you eat way less calories than you usually do. For example, on Tuesdays and Thursdays, you restrict your intake to about 500 calories. This method (alternate day fasting) is gaining in popularity. But there’s another method of IF that I prefer….

Before discussing what the second kind of intermittent fast is, let me get this out of the way first. Intermittent fasting is not starvation. When some people hear “fasting” they equate it with food abstinence. As a certified nutritional therapist, I consider starving yourself of vital nutrients just to lose a couple pounds (say, to squeeze into a wedding dress) the worst thing you can do for your health.

And let me just also add that this second type of intermittent fasting, which I’m about to describe, I’ve seen first hand how well it works.

My husband, Brandon, is a IF guinea pig. Intrigued by it, Brandon has been doing intermittent fasting for over a year now. I gotta say I think I’ve fallen back in love with him (don’t worry, babe; I didn’t really ever fall out of love with you). His abs are now like a Greek statue; his slight fast food belly melted away.

Intermittent fasting: time-restricted feeding

The second kind of intermittent fasting, the protocol that’s really benefited Brandon and lots more people, is called “time-restricted feeding (TRF).”

And it works like this. At first, you only eat during a 12-hour window. It really doesn’t matter when. This is one reason why Brandon and lots of others love intermittent fasting. You’re probably familiar with one of the golden rules of nutrition that you shouldn’t eat late at night. Well, with TRF, you throw that theory out the window.

Eventually, with TRF, say, after a week or two, you narrow your eating window to 10 hours. Do the simple math and that means you’re fasting for 14 hours. Then, after another week or two, you narrow the eating window by two more hours. That means you’re only eating during an 8-hour window, say, from 12 noon to 8 p.m.

The best part about TRF is that you’re not really restricting your calorie intake. Although, to be sure, your belly will shrink after fasting for 16 hours. Therefore, you’re not going to want to break your fast with a huge serving of steak and eggs. (Keep reading for tips on how to break your fast.)

But how does fasting for 16 hours a day benefit your health and help you lose weight? And get washboard abs like Brandon?

Benefits of Intermittent Fasting

Studies like this one  (and this one) show that IF normalizes (reduces) the amount of fat you have in your blood.  In addition, IF controls your blood sugarincreases insulin sensitivity (a good thing) and even decreases blood pressure. Moreover, intermittent fasting reduces inflammation in the body. Most importantly if you’re trying to lose weight, IF reduces body fat. And here’s the best part: studies show that it takes just 8 weeks for these benefits to manifest. (For hubby, Brandon, it was even less.)

And here are some other benefits of IF, according to research. University of California, Berkeley researchers suggest it can reduce your risk of cancer. Also, when you fast for 16 hours, it might help activate genes in your DNA that help you live longer.

To remind you, intermittent fasting isn’t really a diet, within reason, of course. You’re not going to reap the benefits of intermittent fasting if you eat lots of junk food during the 8-hour eating window. But because you can more or less continue to eat the foods you love without restricting your calories, lots of people are able to stick to IF for a long time. In fact, this study concludes, “an IF protocol has been shown to produce higher compliance.”

Anecdotal evidence doesn’t mean squat to scientists and certain consumers who need proof that something works. All I can tell you is that Brandon swears that he has more energy and is able to focus better, for longer periods of time.

Intermittent Fasting: how to break your fast

I cringe every time I hear or read about this. Allow me to explain. Every now and then, I’ll read a Facebook post. It goes a little something like this…. “So excited to start my 7-Day Cleanse and purge those toxins. One last naughty meal at the Jack In the Box before I officially start.”

Argh! No! No! You can’t eat like crap (pardon my potty mouth) right before you do a cleanse or an even longer 21 Day Detox. Absolutely not. You’ll set yourself up for nasty detox symptoms like a killer headache.

The same goes for breaking your fast. After you fast for 16 hours, the last thing your body needs (and wants) is junk food. Eating junk after fasting will negate much of the benefits of intermittent fasting (including activating human growth hormone [HGH], which helps you burn fat).

What your body needs to break the fast is a nutrient-dense drink, which will resupply your body with vitamins and minerals. Organic Green Drink is the perfect thing for breaking the fast.

What to Drink In the Morning So You Don’t Break Your Fast

As I previously state, your belly will shrink after fasting for 16 hours. (Don’t worry, it takes very little time to get used to going this long without eating. Plus, you’ll feel very energetic because your hormone levels will be more balanced.)

Thus, you’re not going to feel like breaking your fast with a big meal anyway. Keep in mind, though, that if your fasting window is 8 p.m. to noon, you can’t have any Green Drink before noon. That’s because Green Drink contains calories. So you’d be breaking your fast.

There are some non-caloric things you can have in the morning to keep you going. Brandon likes to have some black coffee. I don’t recommend adding non-caloric sweetener. That’s because it may trigger cravings for calories. That being said, add Stevia or Monk Fruit Extract if you can’t stand the taste of black coffee and need to satisfy your sweet tooth.

Another popular drink that won’t break your fast that’s been making the rounds in intermittent fasting circles combines the following ingredients: Himalayan sea salt, lime juice, apple cider vinegar, and cream of tartar. The ingredients in this bizarre concoction all have a purpose.

The sea salt provides you with trace minerals, which are essential for everything your body does. The apple cider vinegar helps your body absorbs these trace minerals. Also important is that the vinegar helps stabilize your blood sugars. This helps you stick with the fast. Next, the cream of tartar is very high in potassium, which also will help you fast for a full 16 hours. The lime juice is optional but the reason it’s added is it may help aid the body in detoxification.

Intermittent fasting: how to get started

If you’re ready to give IF a try, it’s really simple. For the first week, pick an equal 12-hour fasting/eating window. For example, eat between 8 a.m. and 8 p.m. A week later, try to extend your fast time by two hours. Then, a week after that, bump it up to a 16 hour fast. And don’t forget to break your fast with some Green Drink.
