Do you have any idea what your triglyceride levels are? If not, you should. One of the key markers of cardiovascular health, triglycerides are largely affected by your diet and lifestyle. The good news is that according to a clinical trial, there’s one easy way to dramatically reduce your triglyceride levels: doing a Chef V 21 Day Detox. Dietary fat has a negative connotation. So in this respect, triglycerides are important for overall health. If you had no triglycerides, you’d have no energy. But, like with everything in life, too much of anything can be dangerous. And it turns out that approximately 1 in 3 Americans has high triglyceride levels.
The Dangers of Having High Triglyceride Levels High triglyceride levels in your blood can raise your risk of heart disease and stroke, explains The National Heart, Lung and Blood Institute. So what causes excessive triglyceride levels? Sometimes it’s genetics, but most often, it’s lifestyle, starting with diet. Again, most people think that if you eat fat, you’ll get fatter. And if triglycerides are fat in the blood, then it stands to reason that the more fat you eat, the more fat you’ll have in your blood. But that’s not necessarily the case, especially if you consume a Mediterranean diet rich in heart-healthy monounsaturated fats, like the type of healthy fats I mentioned at the beginning. The biggest dietary culprits that contribute to high triglyceride levels are: If you exercise every day and eat a diet that consists mostly of fruits and veggies, low-starch grains (quinoa, wild rice, ancient grains), lean protein, and healthy fats, you’ll likely keep your triglyceride levels in a healthy range (below 150 mg/dl).

A Research Study Worth “Weighting” For: CHEF V Clinically Proven For Weight Loss
The word “detox” has dubious connotations: Slick-marketed detox pills, crazy fad diets, water fasts, and fruit juice fasts. So it’s no wonder most people put more weight back on than before trying a detox.

And I can’t say I blame them.
So many people have been burned by ineffective detoxes in the past. Maybe they lost a bunch of water weight (and were glued to the toilet in the process). But they put the weight back on after the detox.
I get it. Detoxing sometimes has a bad rap. But, unfortunately, there’s a lot of crappy detox products out there.
But doing a safe and effective detox can be transformative. For the better part of two decades, I’ve believed in the power of detoxing whenever I needed to improve:
- Elimination: Less constipation
- Liver function: Clearer-looking skin
- Digestive enzyme function: Enhanced nutrient absorption and digestion
- Inflammation: Lower levels of C-Reactive Protein
- Energy: Better physical energy and mental stamina

Clinical Trial Results: Participants Lose Avg. 8 POUNDS
Recently, CHEFV.com commissioned Santa Monica-based Citrus Labs to independently analyze the effects of following a 21 DAY STARTER DETOX, followed by a 7-day ORGANIC GREEN DRINK PLAN, for a total of 28 days.
For the clinical trial, 38 men and women between the ages of 31-65 were recruited. At the beginning of the trial, participants weighed, on average, 176 pounds. By the end of the 28 days, the participants’ average body weight was 168 pounds. Of course, some people lost significantly more than 8 pounds.
(If you check out our SUCCESS STORIES, you’ll see that people who have more weight to lose have lost an impressive amount, in some cases over 50 pounds in just 21 days. And the best part is they have kept the weight off!)
Now, if you don’t think 8 pounds is a lot in 28 days, I want you to consider two things.
First, none of the study participants had any chronic metabolic disorders such as obesity or type 2 diabetes. In other words, study participants didn’t necessarily have a significant amount of weight to lose.
And secondly, going from 176 to 168 is a drop of almost 4.5%. Imagine melting away nearly 5% of your body, especially the part you least want to keep.
But it wasn’t just the impressive weight loss that the participants were stoked about. Nearly 80% of the participants said they felt in a better mood, and over 72% felt they had more energy. And 88% felt better overall.
I can’t say I was surprised by the results. That’s because in creating the 21 DAY DETOX, I didn’t have just the scale in mind. Instead, my mission was to create a detox program that safely improves digestion and elimination while teaching customers how to eat healthily for the rest of their lives.

I’m Veronica, Certified Nutritional Therapist, author, and proud owner of Chef V. You might know me for my Green Drink and Cleanses, but I started Chef V as a personal chef. In my first video cooking series, I’ll be sharing some of my clients’ favorite recipes with you.

Vegan Moussaka
Step by Step
INGREDIENTS
- 2 tablespoons cold-pressed olive oil, divided use
- 1/4 cup sliced white onion
- 1 clove garlic, minced or pressed
- 1 pound minced mushrooms
- 1 tablespoon gluten-free flour
- 1 cup Chef V’s Raw Almond Milk
- 3/4 cup vegan mozzarella shreds
- 1/2 cup vegetable broth
- 1/2 teaspoon dried rosemary
- 1/8 teaspoon ground nutmeg
- Sea salt and black pepper, to taste
- 1 large (or 2 small) zucchini, thinly sliced lengthwise like lasagna noodles
DIRECTIONS
Preheat the oven to 350F. Lightly coat a 6×6 inch baking dish with coconut spray.
PREPARE THE INGREDIENTS
ONION
Cut off both ends of the onion, remove the skin, give it diagonal cuts all the way across the cut end. Slice across cut end for perfectly diced onion.
MUSHROOMS
Chop the mushrooms – I love the nice meaty texture they give to the dish.
ZUCCHINI
Cut off the ends so the end is flat. Slice lengthwise making pieces like a lasagna noodle.
SAUTE THE ONION, MUSHROOMS & GARLIC
In a saucepan, saute onions in 1 tablespoon of olive oil for about one minute, until translucent. Add the garlic, then the mushrooms. Continue cooking for about 3 minutes more.
MAKE THE BECHAMEL SAUCE
Add one tablespoon olive oil to a saucepan, add the flour into the oil, and stir. Slowly add the almond milk while stirring. Add 1/2 cup vegan cheese.
Once the cheese is melted add the spices – 1/8 teaspoon nutmeg and 1/8 teaspoon rosemary.
The sauce will get creamy and thicken. Reduce the heat and simmer it. Add the broth and continue stirring.
ASSEMBLE THE DISH
In a 6 by 6-inch baking dish, assemble the moussaka.
- Cover the bottom with a layer of zucchini slices.
- Sprinkle with 1/2 the mozzarella shreds.
- Top with mushroom mixture.
- Sprinkle remaining mozzarella shreds.
- Cover with a layer of zucchini slices.
- Top with sauce.
BAKE THE DISH
Bake for 45 minutes, or until the sauce is golden brown.
Let cool for 10-15 minutes before serving.

That’s because the global detox drink market size was valued at nearly $5 billion in 2021. And the vast majority of detox drinks have three major problems:

Chef V’s 21 DAY DETOX Put To The Test
All the benefits of a CHEFV.com detox listed here wouldn’t hold much water (no pun intended) if a clinical trial did not find the results “statistically significant.”
Statistical significance in research studies refers to the likelihood that the observed results are not due to coincidence or chance but occurred directly because of the intervention.
And in this case, the intervention was following Chef V’s 21 DAY DETOX (details), followed by a 7-day period during which the 38 participants of the study consumed one 16-ounce serving of Organic Green Drink and consumed a healthy lunch and dinner with ingredients, recipes and resources suggested and created by Veronica Wheat. (These suggestions and resources are provided to all ChefV.com customers who purchase a CLEANSE or 21 DAY DETOX.)
The 38 subjects (male and female) were between the ages of 31-65 and in relatively good health with no chronic health problems. This fact is important because if someone was recruited in the study who had, say, obesity, it might be easier for them to lose more weight than somebody who has a smaller Body Mass Index (BMI), thereby skewing the average weight loss results.
However, this isn’t to say that the participants were pictures of perfect health. They had to self-report that they were tired several times a week, experienced brain fog, sleep issues, trouble with focus, or experienced a busy and stressful life. Participants were also recruited if they experienced consistent gastrointestinal issues such as bloating. With these common health concerns, it would be easy to study whether the participants experienced improvements in these areas after finishing the 28 day trial.
The clinical trial was conducted by Santa Monica, CA-based Citrus Labs in February 2023.
The 38 participants completed baseline surveys and had blood samples collected by a third-party lab. The participants also completed surveys and had a blood sample taken after 28 days of using ChefV.com products.

The clinical trial tested the participants' blood levels for:
- Total cholesterol
- LDL cholesterol (“bad” cholesterol)
- Cholesterol/LDL ratio (high levels are associated with a higher risk of heart disease)
- Triglycerides (fat in the bloodstream)
- C-Reactive Protein (a marker of inflammation)
- HbA1C (“A1C” measures blood sugar levels over a 3-month period)
The results of the clinical trial, according to Citrus Labs:
- Total cholesterol: 9.2% reduction
- LDL cholesterol: 10.7% reduction
- Triglycerides: 23.3% reduction
- Cholesterol/LDL ratio: 7.7% reduction
- C-Reactive Protein: 34.1% reduction
- A1C: 1.7% reduction

But first, let me briefly explain why I think the link between diet and sleep quality is fascinating. Mostly, it’s because few people think of the connection between weight management and sleep. Less Vitamin C intake was associated with non-restorative sleep. Red and yellow peppers contain mega C. Brussel sprouts, kale, broccoli, strawberries and cauliflower are other healthy sources rich in C.
Vitamin B6
I don’t eat that much animal protein. But one reason I include wild salmon in my diet (along with the occasional tuna when I’m at a sushi restaurant) is because it contains a good amount of vitamin B6. Among the many benefits of this water-soluble vitamin (also called pyridoxine), one of them is melatonin production.
Magnesium
Magnesium is important for sleep because not getting enough of this mineral in your diet is linked to problems staying asleep. A great source of magnesium is grains. Not all grains are good for you, however, especially ones that don’t have a lot of nutrients and get digested too quickly. Barley, wild rice, amaranth, and triticale are a few examples of magnesium-rich grains that your body takes a long time to digest. (The longer it takes to digest, the less cravings you’ll have.
Don’t Eat This And That If You Want A Good Night’s Sleep
If you want to fall asleep fast, limit your intake of dairy and meat. Palmitic acid is a saturated fat. It’s found in butter, cheese, milk, and meat. One study shows that diets high in palmitic acid led to an increased difficulty in falling asleep. Another study reported rats fed a diet rich in palmitic acid, were unable to regulate their food intake.

Some of my most loyal customers are taking charge of their health despite having chronic metabolic disorders like type 2 diabetes. But first, let me tell you why semaglutide hits home for me. You see, my immensely talented graphic designer, Jean, was involved in the clinical trial for its effects on diabetes. Jean has used the drug for 7 years and swears by it. So when Jean told me about this wonder drug, I was determined to look into it and so far the results are promising. And for me to sing the praises of a pharmaceutical remedy is saying something because normally, I’m Miss Mother Nature.
Semaglutide: Sourced From A Monster
I admit that when Jean told me where the idea of semaglutide was first hatched, I didn’t believe her. So I verified her claim and now I owe her an apology. But you would be skeptical if you heard that the way the drug can change sugar metabolism is because of the venom of the Gila monster.
Gila monsters aren’t actually that scary looking. They’re really just small lizards that weigh 5 pounds at most. But in the reptile’s venom—not deadly to us but it wouldn’t tickle if you got bit—are hormones that regulate blood sugar.
OK, so semaglutide isn’t actually synthesized from Gila monster venom but rather from a synthetic analogue of a hormone in Gila monster venom called GLP-1 (glucagon-like peptide-1).
Glucagon is like the unpopular step-sister of insulin. Almost everybody knows that insulin is the hormone that controls blood sugar. But it’s not the only one that does so. Glucagon actually raises blood sugar when blood sugar levels are too low.
According to Vox.com, doctors noticed that people who took semaglutide were not only better able to manage their blood sugar levels, they also lost weight. Obesity researchers got very excited over the results.
Semaglutide Drugs For Weight Loss
Semaglutide is the hormone molecule that goes by a few different brand names. Besides Ozempic (low-dose), there’s Wegovy, which is a once-a-week injectable, higher-dose weight-loss medication. And if you’re deathly afraid of needles, there’s an oral version called Rybelsus (did Big Pharma marketers run out of clever names?).
Harvard Health doesn’t come right out and say it but for best weight loss results, if you read between the lines, it seems that Wegovy works best for weight management.
Again, I want to stress that if your doctor puts you on a semaglutide drug, you’re not injecting Gila monster venom. What you’re injecting is a synthetic hormone that naturally is found in the digestive tract. Real GLP-1 that’s in your gut signals the pancreas to release more insulin, delays the emptying of the stomach which helps you feel full for longer, and signals the brain that hunger has been satisfied.
(To trick my brain into feeling satisfied, I don’t eat a regular breakfast. Instead, I drink water first thing in the morning, wait about 20 minutes then have 8-16 oz of Green Drink. To complete my “breakfast” I’ll have a plant-based protein shake an hour or two later. Hunger solved.)
Does Semaglutide Work?
A study published in the New England Journal of Medicine from March of this year shows really promising results. Those that were randomly assigned the drug had an average weight reduction of nearly 15% after about 16 months. That’s impressive weight loss. A 300-pound individual would have lost about 45 pounds with those results. Not too shabby!
In even more recent trials, more than 50 percent of trial participants have lost 15 percent of their bodyweight and up to 40 percent of participants have slimmed down by 20 percent, according to the University of Alabama at Birmingham.
Why Semaglutide Will Be A Weight Loss Success Story
Weight-loss and obesity medications are notoriously fraught with dangerous side effects. Considering the relatively mild side effects and efficacy of semaglutide, it’s easy to see why nutrition therapists (like yours truly), registered dieticians and doctors are excited about semaglutide.

Let’s start off with this study on kale. Besides numerous beneficial effects on health, it lowers your blood sugar levels after a meal. What does that mean for weight loss?
When blood sugar levels are high, your cells can no longer allow sugar from the bloodstream to enter. And as a consequence, the excess sugar gets stored as fat by the liver.
Unless you plan on doing several rounds of sprints or go for a long-distance run, that extra fat’s going to go where you least want it.
For this reason, kale is considered a superfood for people with type 2 diabetes.
Green Drinks for Good Gut Bacteria
Remember I was saying that when you eat a donut or other junk carb in the morning (or anytime of day), it feeds yeast in your gut? More specifically, it causes yeast to proliferate (multiply in number). And what this means is that you’ll end up with too much bad bacteria in your gut.
But this study proves a vegetable juice-based diet improves gut health. In the study, the participants consumed only a vegetable/fruit juice blend for three days. On the fourth day, the researchers observed a significant decrease in weight and body mass index.
And this weight loss was maintained until day 17. The only reason it wasn’t sustained for longer is that from day 4 onwards, the participants resumed their normal diet.
In addition, by day 4, the researchers noticed less harmful strains of gut/stool bacteria and more beneficial bacteria. Having enough friendly critters in your gut, as creepy as it may sound, is necessary for sustained weight loss.
Here’s one more study I’ll leave you with for now. It says that diets containing green leafy vegetables improve liver fatty acid profiles. The study is the first one to prove how green leafy veggies improve the liver health in animal predisposed to developing hypertension.
Your liver has to be in optimal condition in order to properly detoxify and break down dietary fat. If you have a “sluggish” liver, you’ll have trouble losing weight.
One of the green veggies in the study is collard greens, which is in my Green Drink. The study concludes that green leafy veggies not only improves liver health but also lowers the risk of cardiovascular disease and high blood pressure.

Despite Its Buzz, Are Doctors On Board With Intermittent Fasting?
We’re all down with the Intermittent Fasting trend here at Chef V. My husband, Brandon, looks totally chiseled because of it. Several of our Customer Relations Specialists have lost lots of weight following it. And their cravings for sugary snacks have diminished like their waistlines because of following a time-restricted diet plan. And me? Well, I’ve been doing Intermittent Fasting before it was even recognized as a health trend. I credit it greatly for the reason why I wake up buzzing with energy.
But even though us Chef V peeps have had success with it, I wanted to see what the mainstream medical community thinks about Intermittent Fasting. After all, anybody can have short-term success when they modify how–and when–they eat. But that weight can quickly come back on and then some. And more than that, certain diets can have unintended consequences. Remember when low-fat diets were all the rage? People started eating tons of carbs instead, which has greatly contributed to the obesity and diabetes epidemic.
So, are doctors on board with Intermittent Fasting?
Health Experts See Great Promise In Intermittent Fasting
I don’t need a doctor to tell me that Intermittent Fasting works for weight loss. I’ve seen it with my own eyes. I’ve even read an incredible story in People about a physician who lost 125 pounds because of time-restricted feeding.
But beyond incredible weight loss success stories, I was really interested in finding out about the effects of time-restricted feeding on heart health. After all, many people who struggle with their weight also have other chronic health problems such as high blood pressure and type-2 diabetes.
I was happy to discover that Monique Tello, a medical doctor, who is a contributing editor with Harvard Health Publishing, is all in favor of Intermittent Fasting. She says, “[Intermittent] fasting, when combined with a healthy diet and lifestyle, can be a particularly effective approach … for people at risk for diabetes.”
Dr. Tello was also impressed by a University of Alabama study, which concluded that after five weeks, the Intermittent Fasting group had dramatically lower insulin levels and significantly improved insulin sensitivity. The test group also had significantly lower blood pressure. Not only that, the group also had significantly decreased appetite.
Intermittent Fasting: It’s Good For Your Heart (And May Prevent Cancer)
Fasting for short periods of time isn’t just good for your belly. It’s also good for your heart. According to a web article on the highly-regarded academic medical center, Cleveland Clinic, temporary fasting can help lower blood pressure, reduce cholesterol, control diabetes and reduce weight.
These four health markers constitute the greatest risk for developing heart disease.
Cleveland Clinic even acknowledges that some studies also show that “fasting may help prevent cancer or increase the effectiveness of chemotherapy treatment.”
The good news about Intermittent Fasting keeps rolling in. Consider this article in the New York Times, which says that more studies are showing that eating late at night and snacking during the day is a major culprit of weight gain and metabolic dysfunction. The recipe to break this cycle: time-restricted feeding.
The NYT article references a study of prediabetic men. The men who ate only during a six-hour window had lower insulin, reduced levels of oxidative stress, less nighttime hunger and significantly lower blood pressure.
Doctors Warnings About Intermittent Fasting
Just like everything else in life, there are pros and cons about doing intermittent fasting. From a health perspective, some doctors and researchers are warning people about temporary fasting. The reason? Not eating for, say, 16 hours (which is how long I recommend not having calories), can deplete your cells of electrolytes. Electrolytes are like spark plugs for your cell; they ignite cellular energy.
That’s why I recommend having a non-caloric electrolyte drink before you go to bed and when you wake up. A simple way to get electrolytes without breaking the fast is adding a teaspoon of Himalayan sea salt to a glass of water. Or buy some cream of tartar. (Cream of tartar tastes nothing like tartar sauce. In fact, it’s often used in baking.)
Another thing you should keep in mind about intermittent fasting is that you shouldn’t pig out when you break the fast.
“You don’t want to shock the system,” Dr. Haitham Ahmed tells the Cleveland Clinic. Ahmed recommends breaking the fast by snacking on a few dates or other dried fruit. Then take a break, he says, and then eat fruit and other light foods at first.
I both agree and disagree with Dr. Ahmed. I agree that you shouldn’t eat a huge meal when you break your fast. But eating dates and then more fruit after that? I strongly disagree. Just eating a few dates contains 25 grams of sugar. And eating more fruit? That’s going to add more sugar to your system. Sure, natural fruit sugar is better than added sugars in junk like soda, but isn’t the name of the game when it comes to weight loss and other positive health outcomes curbing sugar intake?
That’s why I recommend breaking your fast each morning with 16 oz of Organic Green Drink, which contains 7 leafy green vegetables, and a wee bit of organic apple and apple juice to sweeten things up. I haven’t updated any of my weight loss because I wasn’t really seeing it, but today, I did. Plus, I hate people seeing me like this.
When I left my job it was not because my books had done so well I was going to write full time. In fact, I was just beginning to edit Breach. I left as just a pause, one that ended up being needed, because within a few weeks I hurt my knee and my beloved grandmother passed away. The next year, I released Breach and my hubs said “Ok, you don’t have to go back to work.” BTW, in that time I’d had to have surgery on the injured knee.
Between the surgery and writing full time something happened that I did not expect.
I gained weight.
It wasn’t a lot at first, but it did scare me when I passed the highest I’d ever been. Then I cried when I passed the number I said I never would.
Each year, I gained more weight. All the travel and stress and another surgery and needing something quick and easy started to add up, and in 4 short years, I’d put on around 100 lbs. That’s a lot of weight!!
I felt terrible about myself. I hated going to signings because I hated how I looked and felt. I didn’t FEEL good.
The biggest thing about weight loss that people don’t understand is that it’s not about WANTING to lose weight, it’s about having the MOTIVATION to lose weight. Wanting can lead to depression as you stare in the mirror, and you lose any desire to eat healthy.

Elena M. Reyes came to visit and there were some signings, but I managed not to gain any weight. For my birthday I splurged for almost a week eating anything I wanted, because for my birthday, that was all I wanted.
