I took a private cooking class in Bali on my honeymoon in August, 2016. I learned how to make Genep - Balinese Curry Paste and recipes that use it. I learned so much from my teacher “I Dhono” (sounds like; I dunno, in English slang). He was so informative and we laughed and exchanged chef secrets. I taught him some things as well, believe it or not! The completed meal is in the photo - almost all of my Balinese recipes use this very useful curry paste.

INGREDIENTS
1 tbsp. ginger
1 tbsp. shallot
1 tbsp. garlic
1 tbsp. turmeric
½ tsp. dried coriander
½ tsp. black pepper
½ tsp. sea salt
1 tbsp. fresh red chili (adjust to your preference)
INSTRUCTIONS
Blend all the ingredients together or for more traditional way, use a mortar and pestle to grind the ingredients together until they form a paste. Use this paste for the corresponding soup, curry and salad recipes.
