INGREDIENTS

  • 1 lb. ground chicken
  • 2 tbsp. base genep (recipe in the blog)
  • 4 cups organic chicken broth
  • 1 zucchini, chopped in large chunks

INSTRUCTIONS

Mix the ground chicken with half of the base genep and shape into small meatballs (about 1/2 -1 inch in diameter). Boil the chicken stock. Mix in 1 tbsp. of base genep into the chicken stock. Place the meatballs into the boiling stock. Once the meatballs float to the top, add the zucchini and cook for 1-2 minutes, until zucchini is soft. Remove from heat and let cool for 5 minutes before serving.
